You can face serious consequences including jail time if you are caught cheating or even acting suspicious at a casino.
There are cameras surrounding a casino, they will play the tape later on if they suspect suspicious activity of any kind. There are also surveillance people that are everywhere, ready to stop any type of activity that does not look like it is fair or right.
You will begin to get watched if you begin to do something that is unusual. Like, for instance if you have been playing five dollar hands every time then suddenly place a one hundred dollar bet, this is thought of as suspicious. If a dealer suspects unusual activity then they have a switch that will signal the surveillance team to begin to watch the suspicious player more closely.
High limit blackjack is often a game that people will cheat in. They may exchange cards either in their own hands or with another player. Things like card marking with ink that they have hidden underneath the table. They may even steal from other players by distracting them and taking their chips or coins. Even if the dealer is not able to watch everything that they do, there is still a good chance that they are being observed.
The dealers are sometimes known to cheat in favor of the players. They also may give them more money during an exchange. While it may seem odd that the dealer would cheat to make the players win. Generally a dealer will have an incentive as they will often get a cut or at least a bigger tip for helping a player to win or cheat.

Surveillance will go through each deck of cards that is turned in and they will check to see if any are missing or have been handled. Some casinos, to prove that they are not cheating will spread out a new deck to show the players that it is full.
Card counting is a huge problem in casinos. However, card counting is not against the law. It is considered an unfair practice among casinos and they have the right to refuse service to anyone that they suspect may be guilty of card counting. If there is a big enough issue, then people can be banned from that specific casino all together.
